Bread: Reviving a Lost Craft

Visitors approaching the Taste Paviliosn were greeted by the smell of fresh bread baking in giant outdoor ovens at the entrance to the building. Acme Bread’s Steve Sullivan led a dream team of artisanal bakers in kneading, shaping and baking the rustic sourdoughs, baguettes, focaccia, wood-fired pizzas and Indian-style tandoor breads that were served all day at the Pavilions. A “Bread Museum” next to the ovens featured hands-on demonstrations of wheat grinding and earth-oven baking, a giant snail sculpture made of bread and photo displays of artisanal baking. Dozens of bakeries from all over America were featured in the Bread Museum and over 100 individuals volunteered as bakers at the Bread Pavilion. Some, but not nearly all of the participants were:
