The Pickles & Chutney Pavilion offered tastes of handcrafted fruit and vegetable pickles, chutneys and lacto-fermented foods made by a variety of American producers, noted chefs and cookbook authors. Pickles have historically served to preserve bounties of fresh produce as a safeguard against less-plentiful futures. Every culture worldwide eats pickles: sauerkraut, kim chee, umeboshi, pickled cucumbers, peaches, figs and fish are delicious examples. The rich, diverse tradition of pickling by vinegar or lacto-fermentation is a global legacy to celebrate and renew.
